Something that I’ve been seeing (well, sorta almost seeing) lately is
the growing tendency over the last couple years of websites using text
that is very hard to read. The biggest offenders are the light gray on
white or off-white background, often using a small (10pt or less) font
on top of it.

There’s just no sense in this. If your readers have to strain to read
your site, they’re less likely to even bother finishing the page and
forget about them clicking their way farther into the site.

Making the font size and color combinations easy on the eyes is a good
idea. It’s easy to do and will end up with a lot more people not only
reading your site, but more of them will be interested in coming back.
